Day Seventy Eight - Last Lessons in the kitchen 😱

A leisurely start to the morning in the kitchen for 8:30 a.m.  ...knowing it was the last mornings cooking before the practical exam seemed to make it somewhat easier and more relaxed! 

Today I made some Arjard, Pickled Onion, Horseradish cream for a smoked salmon dish, then a chocolate ice-cream with a rum cream and chocolate case. 

Strange feeling knowing there is no more mornings cooking ahead ... no more teachers ... at least not outside an exam setting 😝

The demonstration today was with Darina and today’s she made dishes that were specifically requested by the students! The dishes included ... 

Bagels
Chilled Tomato Water with Lemon Basil
Globe Artichokes with Melted Butter and variations
Ottolenghi’s Roast Chicken with Saffron, Hazelnuts and Honey
Cacio e Pepe
Ballymaloe Sausage Rolls
Brother Hubbard’s Merguez Sausage Rolls
Bun Dough and variations – Iced Whirls; Chelsea Buns; Bath Buns; Cherry Buns; Walnut or Pecan Sticky Buns

Bocca di Lupo’s Pistachio Gelato
Alison’s Chocolate Tart
Homemade Nutella

After demo I had to try practise some of the tricky parts for my exam ... I also then paid a visit to the Castlemartyr resort to see an old friend from my time in Norway who was staying there on a trip around Ireland! great to see you Owen! 😊

Afterwards some filing and preparation for my order of work for the exam ... 

Tomorrow we will have our final demonstration with Rory and then in the afternoon I will do my cook ahead for the practical exam where I make my ice-cream 🤞
